  • organic beef stock 800 ml

Chilli chicken with drunken pinto beans


  • 1 whole free-range chicken, butterflied


  • 4 dried ancho chillies
  • 1 tablespoon dried oregano
  • 10 allspice berries
  • cloves 4 whole
  • 3 ripe plum tomatoes
  • 6 cloves of garlic
  • chipotle chillies 2 dried
  • guajillo chillies 4 dried
  • limes 2
  • cumin seeds 1 teaspoon
  • ground cinnamon 1 teaspoon
  • cider vinegar 100 ml


  • olive oil
  • 2-3 fresh bay leaves
  • 6 cloves of garlic
  • 1 white onion
  • 2 fresh jalapeño chillies
  • one 330 ml bottle lager-style or dark Mexican beer, depending on your preference
  • 6 sprigs of fresh coriander
  • 2 x 400 g tins pinto beans
  • 2 ripe plum tomatoes


  1. Preheat the broiler to 200°C/400°F/gas 6.
  2. To make the adobo-style recado, divide and spot the tomatoes in a little simmering plate with the unpeeled garlic cloves and dish for 30 minutes or until delicate.
